There are so many fun was you dress this up … use your imagination. If you are paleo … skip the cheese and add the butta. Yeah, babeey … it could be so good if ya added some cooked meat! hahahaha … ideas are endless. Oh and there is always bacon and goat cheese. help me!! I plan to add all kinds of bits to this simple guide I am going to share with you today. What an amazing way to get your kiddo’s to eat their veggies. :D

Zucchini Pizza Bites…a quick, tasty, low-carb snack
1 small zucchini, sliced 1/4″ thick
1-8 oz. can crushed tomatoes(or marinara sauce)
sauteed garlic, 2 cloves minced
salt and pepper, to taste
1/4 tsp dried basil
1/2 cup mushrooms(optional)
Cut zucchini about 1/4 inch thick. Spray both sides lightly with oil and season with salt and pepper. Broil or grill for about 2 minute on each side. Top with sauce and cheese and broil for approx 1 minute.
I will sautee garlic, mushrooms, and onions with fresh basil and probably oregano–on my I gotta have some flava days I will sautee in Ghee so it be will just mess your mind up good. I can’t wait to try this. I think I can even come up with a version that will work with my current SUPER restricted meal plan that does not inclued added fat of ANY KIND. :D

I think I am going to try it today sometime. Let cha know how I like it. I will have to modify it for the stage of my diet … right now I am only eating cottage cheese–that could be good … so i am working on what I am gonna do. Be glad when I am off … gonna use goat cheese and bacon and white sharp cheedar and something … can’t WAIT!
