Sounds STRANGE, but it truly was delish! I will share my version of the recipe that I made. I take recipes as starting places. The original recipe called for Corned beef only. I like fresh sliced meat from the deli. And, yes I am slightly a snob and prefer Boars Head, because they don’t put as much junk in their meat. Cheesy Ruben Soup–So yummy
Cheesy Rueben Soup
Makes: 14 servings
Prep Time: 30 mins
Cook Time: 5 hrs
Main Meal Soup

Serving size 1 cup.
***This is based on the original recipe which used all Swiss cheese and no provolone and all corned beef.
Ingredients
2 Cloves Garlic, minced
1 Onion medium–think slivery slices
3 tablespoons butter or Ghee–which I used with a touch of butter to finish
2 stalks celery, diced
1/2 lb corned beef chopped

1/2 lb reg roast beef chopped
4 cups beef broth, or 1 32 oz box of beef stock
1 cup sauerkraut (Silver Floss Krisp Kraut)
1 teaspoon caraway seeds, seeds
1 tsp sea salt
3/4 teaspoon black pepper
1 cups Swiss cheese (did swiss blend), grated

2 cups heavy cream

Directions:
Sauté sliced onions in Ghee until soft, and starting to become translucent.

add celery cook for a few minutes, then add garlic and pat of butter over medium heat until caramelized–start this as you finish up the prep for the beef.
Chop Beef. I used a mixture of sliced corned beef and sliced beef from the deli–not a fan of canned–too salty.
Transfer to crockpot on high heat. Add Sauerkraut, beef stock, corned beef, and seasonings to crockpot.
Cook, averred on high for 4 hours, or on low for 6 to 8 hours. Add Swiss cheese or other white cheeses and cream and for another hour.
Freezes well.
I will tell you that this is a wonderful meal … so, if you love Ruben sandwiches, but are going sans bread … You will LOVE this!
